In this blog post, I’ll share my go-to East Coast BBQ recipe, as well as some tips and tricks for making it perfect every time. So fire up the grill and get ready to enjoy some delicious East Coast BBQ!
Here’s how we do it
Ingredients:
- 2-3 halved chickens
- one egg, beaten
- 1/4th cup salt
- 1/3 tbsp fresh ground pepper
- 1 tbsp poultry seasoning
- 7 oz vinegar (apple)
- 4 1/2 oz olive oil
- 1 crushed clove of garlic
Directions:
- It’s best to use quartered chickens with bone in and skin on. Marinate the chicken. In a bowl, whisk together all the ingredients for the marinade. Then, pour it over the chicken halves and let them marinate for at least an hour, no longer than 2.
- Grill the chicken. Preheat your grill to medium-high heat. Place the chicken on the grill, skin side down, and cook for 20 minutes. Then, flip it over and cook for another 20 minutes. Flip it back to the skin side and cook for 15 minutes, then flip it over and cook for another 15 minutes. Finally, grill for 10 minutes on each side, brushing with the remaining marinade just before turning.
- Enjoy! The chicken is done when it reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown. Serve immediately and enjoy the delicious flavors of East Coast BBQ with your loved ones.
How this recipe came to be
My parents were on a road trip down the East Coast, and as they were road-tripping, they passed a sign for the finest East Coast BBQ chicken. SO they decided to stop for a quick lunch.
Mom had an aversion to BBQ sauce, so she was hesitant but went for it because they didn’t know the next time they would see a place to eat. This was unlike any other BBQ chicken they had ever had and nothing like typical barbecue sauce.
Once they tried it, they immediately fell in love. The chef generously shared the recipe with Dad, originally meant to serve hundreds, which gave them both a good laugh as they attempted to scale it down to a family-sized portion.
Dad passed away a few months ago, but his cooking memories will always be with us. One of our favorites is this East Coast BBQ chicken, which we loved and enjoyed at our family get-togethers. I can still remember watching Dad make it, laughing and joking the whole time. The smell of the chicken grilling was enough to make your mouth water.
Now that I have a family of my own, I’m proud to carry on this tradition. Every time I make this chicken, I think of the good times we had with Dad, Mom, and our siblings. And I can feel the love that went into this recipe.
